Polvorones are one of my all-time favorite sweet treats. They are crumbly, buttery cookies dusted with powdered sugar.
I'm not a baker but this recipe is very easy to follow. I mostly followed Dora's Table Vegan Mexican Wedding Cookies recipe but made several changes in the ingredients used. Visit Dora's Table vegan Mexican recipes.
Here's my modified ingredients list:

2/3 cup sugar, granulated
2 sticks (8 oz) of vegan butter, room temperature
4 tbs of coconut oil
3 cups cake flour, all-purpose works too
½ cup chopped pecans
1 tsp. ground cinnamon
2 tsp. almond extract
1 tsp. vanilla extract
1 cup powdered sugar
Instructions
Preheat oven to 350F.
Cream butter, coconut oil and granulated sugar. Dora recommends using a stand mixer, I did mine by hand.
Add vanilla, almond, extract cinnamon and the chopped pecans.
Slowly add flour. Mix until well combined.
Line 2 sheet pans with parchment paper. Roll dough into 1 inch balls.
Place balls on sheet-tray, 1 inch apart from each other.
Bake for 15 minutes or until bottoms become golden brown.
Remove from oven. Place on a wire rack to cool.
Once completely cool, dust cookies in powdered sugar.
