Vegan Polvorones Recipe

Polvorones are one of my all-time favorite sweet treats. They are crumbly, buttery cookies dusted with powdered sugar.


I'm not a baker but this recipe is very easy to follow. I mostly followed Dora's Table Vegan Mexican Wedding Cookies recipe but made several changes in the ingredients used. Visit Dora's Table vegan Mexican recipes.


Here's my modified ingredients list:


  • 2/3 cup sugar, granulated

  • 2 sticks (8 oz) of vegan butter, room temperature

  • 4 tbs of coconut oil

  • 3 cups cake flour, all-purpose works too

  • ½ cup chopped pecans

  • 1 tsp. ground cinnamon

  • 2 tsp. almond extract

  • 1 tsp. vanilla extract

  • 1 cup powdered sugar


Instructions

  • Preheat oven to 350F.

  • Cream butter, coconut oil and granulated sugar. Dora recommends using a stand mixer, I did mine by hand.

  • Add vanilla, almond, extract cinnamon and the chopped pecans.

  • Slowly add flour. Mix until well combined.

  • Line 2 sheet pans with parchment paper. Roll dough into 1 inch balls.

  • Place balls on sheet-tray, 1 inch apart from each other.

  • Bake for 15 minutes or until bottoms become golden brown.

  • Remove from oven. Place on a wire rack to cool.

  • Once completely cool, dust cookies in powdered sugar.
